Single-Serve Tiramisu

When you're craving tiramisu but don't want to make an entire batch, make this single-serving of tiramisu to enjoy all to yourself.

Ingredients 

  • 1 egg yolk
  • 1 tbsp white sugar
  • 2 oz mascarpone cheese
  • 1 tsp vanilla extract
  • 1/4 cup heavy cream
  • 1/3 cup espresso
  • 8-12 ladyfingers

Instructions 

  • Add the egg yolk and white sugar to a heat-safe bowl. Create a double boiler by placing the bowl on top of a pot of boiling water, ensuring that the bottom of the bowl doesn't touch the water. Whisk it together well until the mixture turns pale yellow and thickens slightly. Remove the bowl from the pot once it's ready.
  • Fold in the mascarpone cheese and vanilla bean paste into the egg yolk mixture until combined.
  • In a separate bowl, whip the heavy cream until stiff peaks form, and fold it into the mascarpone mixture. Transfer the cream into a piping bag.
  • Dip each side of a ladyfinger into the espresso and arrange a layer of the ladyfingers in a cup or your container of choice. Add a layer of cream and another layer of ladyfingers. Repeat until you have used up the ladyfingers and cream.
